Spinach-cheese rolls…

I made these rolls during the weekend. They are very simple and easy to make and the taste is simply awesome…if I may say so. These rolls form a very easy snack or appetiser . The crunch of the puff pastry and the slightly soft centre with the melted cheese mixed with the spinach, gives a nice feel to the mouth- great to be devoured fresh from the oven.

Of course, the rolls are all gone, but the pictures were there as a reminder of these delightful snacks, and I’m sending the recipe over to grace Indira’s blog at Mahanandi as my contribution for JFI-WBB : Green Leafy Vegetables.Well,after all, hasn’t it got a green leafy vegetable in it…as a matter of fact, it happens to be my favourite one!!!

Speaking of greens, there is quite a lot of green around…what with the barren branches of yesterday, now full of luscious green leaves…quite a soothing and uplifting sight…new life always is, isn’t it… always adds a sense of renewed vigour…
Before I sidetrack, here’s what’s needed for the recipe-

250 gms of frozen puff pastry, thawed and rolled on a floured surface into a rectangle, 7 inches by 14 inches
3 cups of fresh spinach leaves
1C of grated cheddar cheese
1egg beaten with 1 tblsp of water

How to-

Brush the rolled pastry sheet with a little of the egg mixture.

Spread the spinach leaves on the pastry sheet to form a thin layer, leaving a margin of about a centimetre on all sides.

Top with the grated cheese.

From the longer end of the pastry sheet, start to form a roll, tucking the filling inside while doing so.

Place the roll seam side down and cut into 1 inch rolls.

Place the rolls on a greased baking dish with the open side facing upwards.

Brush the rolls with the egg mixture and bake in a pre- heated oven at 180 deg cel till golden brown and crisp.

Take them out of the oven, let the senses be consumed by the amazing aromas, pass them around, and what else…tuck in!!!
