Peach – rice pudding…

This is one of those dishes which I made, clicked, devoured and then forgot all about it…until today, when my eyes fell upon them as I was rummaging through my pictures.

This dish was made on an instinct when the craving for something sweet had reached it’s zenith. My sweet buds were on their usual high and was desperately in need of something to satiate them. I looked at the options and tried to overcome the urge to give in to the chocolatey monsters…and out of all this, the peach- rice pudding was conjured and brought to life. It was sweet, but the sweetness was from the fresh fruit and the honey. My sweet buds were thoroughly satiated and I did not suffer from guilt pangs afterwards. So that was something that ended really well…so much for the pros…

On the con side, I had made this pudding a long time back and I did take any notes…I usually add ingredients on the spur of the moment, hence what follows is my best attempt at reconstructing it to as close the actual thing as possible…so please, please, bear with me…
What’s needed-

1C of brown rice (can use any other rice of preference)
2 peaches, chopped into small pieces
a handful of raisins
2 tblsp of honey
2-3 drops of vanilla essence

How to-

Pre-heat the oven at 180 deg cel.

Wash the rice and cook with water till it is slightly more than half-done. Drain the water.

Add the peaches,raisins, vanilla essence and honey to the rice and put the mixture into a lightly greased baking dish. Spread out the mixture and pour enough milk to very slightly above the rice mixture.
Bake in the centre of the pre-heated oven till the rice is cooked and it has set.
The pudding which I had was a bit dry…I loved it that way but if a lighter consistency is required, just add some more milk. Also even while baking, do keep checking if it needs more milk to cook the rice . If in the mood for a richer version drizzle some cream over it while serving.

Serve hot or cold. We loved it , especially me…(as stated earlier). The nutty texture of the rice felt good with the fruits…a nice simple dessert…

I rarely eat rice pudding and have never had one with fruit – looks nice!

Lot better and healthier than the regular rice pudding! Looks great and I bet it tastes yummy too with Peaches:)

I heart about these fruit puddings but never tried them. I also heard about Blue Berry pudding, will try and post that soon.

I get that sweet craving so often…and this looks like the perfect dish to satisfy the craving, healthy and delicious! loved your use of brown rice in this recipe.

When I first came across making pudding in the oven, I was surprised. It takes longer to cook in the oven, when we have the mighty pressure cooker. But baking does wonderful things to the food. Now you have inspired me to make this. Will make it sometime. Thx Sunita :)
