A block and some cookies…

Probably an acute case of writer’s block has gripped me. Here I am, hands ready to click away on the keyboard… only, I have no clue what to write about. :-(

Never mind, at least I am sure what recipe I want to post… Chocolate, fruit and nut cookies

… an indulgent cookie with chocolate and dried fruits and nuts. And, for a chocoholic like me, it’s heaven. So here goes…

What’s needed-

100 gms plain chocolate, melted and slightly cooled
1 C of mixed dried fruits and nuts (almonds,raisins, and cranberries)
1 and 1/2 C whole wheat flour
1/2 C cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
a pinch of salt
1 egg
3 and 1/2 tblsp oil
4 tblsp molasses
6 tblsp milk

How to-

  1. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt.
  2. Add the dried fruits and nuts and mix well.
  3. Add the chocolate and rub in till the mixture resembles fine crumbs.
  4. In another bowl, whisk together the egg, molasses, milk and oil.
  5. Make a well in the centre of the flour mixture and fold in ( can use fingertips ) to bring everything together into a ball.
  6. Cover the bowl, containing the ball of the mixture, with plastic wrap and chill for about 20 minutes.
  7. Pre heat the oven at 170 deg C and line a baking tray.
  8. Make balls of the mixture and place them a bit apart from each other.
  9. Slightly flatten the balls with your fingertips, keeping them quite rough looking.
  10. Place the tray in the centre of the pre heated oven and bake for approximately 10-12 minutes or till firm .. they will fim further, on cooling.
  11. Cool in the tray for 2 minutes and then, transfer to a rack to cool completely before storing in air tight containers.

The cookies were not overtly sweet and were soft to the bite.

Same with me too, can’t concentrate. Kids school ends today but I have been driving them to school and back whole last week and am so tired.It’s HOT too, get headaches! Glad it’s over today, they will go to see Kung Fu Panda with friends!:)

So the summer break starts :-) …weatherwise,early on this week, we somehow reached 25-26 deg C, but today is much cooler and is supposed to come down by nearly 10 deg…talk about the fickle English weather :-P

btw, thanks for thinking that I’m inspiring enough…means a lot coming from you :-)

Well, you certainly don’t have photographer’s block. Those pics are mouth-watering., Sunita! When I can’t think of something to write, I take a break from the computer for a day or two. I read a lot, maybe go to a movie, and go for walks. Usually, the relaxation and the viewing/reading helps spark some ideas.

At first instance I thought of Cadbury’s Fruit and Nut chocolate bar which is my favourite. This I’m sure would fulfill my craving for that bar. Looks delish Sunita!
