All in a platter…

Kids are great at making a fuss if they have to eat vegetables. So, I tend to cook various dishes of mixed vegetables , so that I can get a number of them at one go. Moreover they are great at meeting the five a day requirements. The colour of the different vegetables provides the necessary eye appeal.

So here goes-(mixed vegetable-cabbage, carrot, potatoes, green peas )

Get together-

1/4th piece of a medium sized cabbage ( savoy tastes better), cut into strips
1 small onion, thinly sliced
1 medium sized potato, Chopped into small pieces(it is important to do this because the rest of these vegetables cook relatively quickly and the potatoes will be left half done)
1/2 a carrot, cut into strips
a handful of green peas (fresh or frozen)
1 and a 1/2 tsp cumin powder
1 tsp turmeric powder
1 bay leaf
1 whole red chilli
1 tsp cumin seeds
salt to taste
a pinch of sugar
3 tblsp cooking oil

How to-

Heat the oil in a pan and add the cumin seeds, bay leaf and the whole red chilli. When they crackle, add the potatoes and fry for a few seconds.

Add the other vegetables, salt, sugar, give it a stir, cover the pan and cook over low heat (not to forget the stirring now and then).

Let the veggies to cook in their own juices. When there is just a little moisture left, add the turmeric and cumin powders. Cover and cook till the vegetables are all done.

Its a really simple dish and can be rustled up in minutes.
