Leafy green vegetables like spinach provide more nutrients than any other food. It is supposed to be a great protector against diseases like osteoporosis, heart disease, colon cancer, arthritis and many others. It is also an excellent source of bone-building nutrients. Leafy greens are also supposed to slow down the loss of mental function. I still remember how my ma used to egg us on to have greens as they, especially spinach, are great for the eyes.
So much for its health benefits. Now for the recipe. It is a simple dish of aloo-paleng saak maasor jool (fish in a spinach and potato gravy).
4 medium sized pieces of salmon
250 gms of fresh spinach leaves, washed, and roughly chopped
a handful of coriander leaves
3 pods of garlic, finely chopped
1 medium sized potato, finely chopped
1 bay leaf
1 whole green chilli, split lengthwise, half way up
1 tsp cumin seeds
1 tblsp cooking oil
Add the spinach and coriander leaves to a blender along with 3/4 glass of water and make a watery paste. Add the chopped garlic and the green chilli and keep it aside( not to blend the last two ingredients)….back home, however, ma chops the spinach very, very fine…I’m too lazy to do that
Heat the oil in a pan . Sprinkle and mix 1/2 tsp each of salt and turmeric powder to the fish and fry them. Keep them aside.
In the same oil, add the cumin seeds and the bay leaf.
When they begin to crackle, add the potato and fry for a few seconds.
