All in a soup…

A bowl of hot soup is always cheery, especially on a cold winter night. The following is one of the favourites in our household.

Ingredients for this chicken, noodles and vegetable soup-

3 pieces of chicken
2 blocks of egg noodles (approx.100 gms)
1 small carrot, grated
a handful of sweetcorn
1 small onion,sliced
a few lettuce leaves, torn roughly
a handful of mushrooms, sliced
2-3 cloves of garlic,finely chopped
1 tblsp soy sauce
1 tsp cornflour, mixed with 1tblsp of water
1 tblsp butter
salt and pepper to taste
1 tsp cream (optional)

Method-

Boil the chicken in 3 glasses of water and then debone and tear them in small pieces. Save the stock.

In a pan, melt the butter. Add the mushrooms, sweetcorn, onions,garlic,carrot, chicken and stir fry for a couple of minutes.


Add the chicken stock, salt, pepper and soy sauce and simmer till the onions are done.

Add the noodles and when they are cooked,


add the lettuce and the cornflour and simmer for a couple of minutes.

When the soup thickens, remove the pan from the fire.


Serve hot in a bowl and garnish with a spoonful of cream.
