Recently, hubby dear has been subtly hinting that I have hardly made any fritters for quite some time. He is usually a health- conscious guy, but when it comes to crunchy-munchies, his healthy regime goes out of the window.
Well, it’s been a dreadfully grey day today…what with it drizzling most of the time… so, I thought, why not pamper him a little… and made these vegetable and red lentil fritters…
Split red lentils (masur dal), washed and soaked in water for half an hour
a handful of fresh spinach leaves, chopped
a few coriander leaves, chopped
1 carrot, scraped and grated
1 large onion, chopped
2 green chillis, chopped
a pinch of turmeric powder
1/2 tsp baking powder
Drain the lentils and grind into a paste, taking care not to make it too watery. In fact, do not add any extra water.
Add all the other ingredients and mix well.
Heat oil in a pan ( should be really hot) and adding spoonfuls of the mixture, deep fry them.
Place the fritters on paper towels to remove the extra oil.
And lastly, do not wait… serve it hot with any chutney or just the good old tomato ketchup!!!
By the way, I’ve said it earlier and I say it again… the way to a man’s heart is definitely through his stomach!!!
