Capsicum egg curry…

Eggs in any form are quite popular in our household… I still remember my ma’s egg currys-simple, yet enjoyable… which reminds me that I have’nt made egg curry for quite some time…so last weekend, I geared up to put things straight…

Every part of India has its own version of preparing egg curries, well for that matter all curries…the same ingredients turn up so differently in each and every household…guess that’s what makes each one unique…

Coming back to egg curries, here’s how I made it-

Whats needed-

4 eggs, boiledand shelled
3-4 potatoes, quartered, boiled and peeled
1 tomato, diced
paste made with 1 onion, 3 cloves of garlic and 1 inch piece of ginger
1 capsicum(bell pepper), seeded and diced
1 tsp turmeric powder
1 and 1/2 tsp cumin powder
1 tsp garam masala powder
1 tsp cumin seeds
1 bay leaf
1 whole red chilli
salt to taste

How to-

Make light slits lengthwise on the eggs. Rub a pinch of turmeric powder and salt on the eggs, fry them and keep them aside.

Add the cumin seeds,bay leaf,and whole red chilli. When they splutter, add the onion,ginger and garlic paste. Add the turmeric and cumin powders and stir till the moisture evaporates. Add the tomato and cook till it becomes mushy and the oil rises to the top.

Add the potatoes and stir for a couple of minutes. Add the capsicum, stir for a minute and add a glass of water. Season with salt and simmer till the gravy begins to thicken. Add the eggs, whole or halved.Add the garam masala powder, stir for a few seconds and that’s it!

Serve hot with rice or rotis!

i am not a big fan of eggs but i must say capsicum egg curry sounds delicious. btw, do u have any of those muffins left? :)

Hey sunita, I’ve never tried frying the boiled eggs before putting it in the curry, does it make a big difference to taste, I bet it does?

Sig,the eggs acquire that sort of roasted taste and a crunch to it as well…do try it…
