Apple-banana teabread…

I planned on baking some bread the other day…but one thing lead to the other and instead of the ordinary bread, came out this teabread, which of course was a pleasant change from the usual. It got the thumbs up from all the three persons whose opinions matter the most to me…and, needless to say, it lit up the breakfast table.

What’s needed-

3 eggs
1/4 C porridge oats
1 and 1/2 C wholemeal flour
1 and 1/2 tsp baking powder
4 tblsp honey
1 apple, grated
1 ripe banana
2 handfuls of nuts( I used cashewnuts), roughly chopped
1/2 C olive oil

How to-

Beat the eggs. Blend in the flour, oats, and baking powder.

Add the honey and oil and mix well.

Add the apple, mashed banana and a handful of nuts. Do not mix for too long after this . Pour into a well greased loaf tin , sprinkle the other handful of chopped nuts on the top and bake at 180 deg cel till a knife inserted through the middle comes out clean.

Serve hot or cold. We had our slices buttered for breakfast…tastes great on it’s own as well. It was really nice… fruity and naturally sweet with a nutty crust…and healthy too…

hey the teabread looks yummicious!! that too with that butter makes me crave for some. I am going to hunt for something in the kitchen.

Thanks Ekta….I would say, bake for about 25 minutes and check…sorry for being vague, but it was quite a while ago and i had forgotten to make a note of the exact time.
